BBQ Vegetable Chips.

I’m always craving potato chips, you could say that I’m an addict. It seems to be a new hype to make your own chips, not only is it a healthier option, they are extremely easy to make. The only tool you will need to make these bad boys with is a Mandoline Slicer. It will slice your potatoes extremely thin, but it also cuts the time out if you were to slice the vegetables yourself. I use the Progressive Julienne & Slicer. But any Mandoline Slicer will work well.

You really can use any hard vegetable for these chips. But I stuck with potatoes, I used Russet, Sweet and Purple Potatoes. You can never have enough potatoes in my opinion. If you want to experiment with other vegetables such as carrot or zucchini, I say go for it. Never be afraid to use or add different ingredients into a recipe.

INGREDIENTS
1x Russet Potato
1x Purple Potato
1x Sweet Potato
1T Olive Oil
2t Sweet Smoked Paprika
1/2t Salt

METHOD

STEP 1: Preheat your oven to 200°C. Place baking baker on two baking trays and spray with cooking oil.

STEP 2: Using your Mandoline Slicer, slice your vegetables very thinly. Place your vegetables in a colander and rinse thoroughly with cold water. Place vegetables onto a paper towel and then place another paper towel on top to dry completely.

STEP 3: Using a large bowl, add your salt, paprika and oil, Whisk to combine. Add your vegetables into the bowl, and toss to coat them in the seasoning.

STEP 4: Place your vegetables onto your prepared baking trays. Make sure none are overlaying each other, as you want to get the crispiness on the edge of your chips. Bake for 15-20 minutes, or until they are golden and crispy. They will crisp even more once they are out of the oven. Store them in an air tight container.
